KLIMA Restaurant and Bar opens in Miami Beach


KLIMA Miami, a progressive ideology in hospitality originating from Spain, announces the highly anticipated opening of KLIMA Restaurant and Bar – a culinary concept inspired by contemporary gastronomy from Barcelona.

The newly renovated 70-seat restaurant property comprises of indoor and outdoor patio dining areas that span over a spacious and breezy 5,200 square feet. Executive Chef David “Rusti” Rustarazo offers a unique menu with a blend of contemporary and international cuisine inspired by Barcelona. The culinary vision for KLIMA Restaurant and Bar reflects the roots of the founders, Pablo Fernández-Valdés and Yago Giner, while combining the very best in local ingredients sourced from premium South Florida suppliers.

Executive Chef David “Rusti” Rustarazo delivers an eclectic menu of seasonal seafood, meats and pasta dishes presented with a simplistic style – inspired by the techniques and flavors from the principality of Catalonia and the western Mediterranean coastal region. Example appetizers include Tuna toast with chipotle, leek and lime ($24); 5 Jotas Iberian ham with Pata Negra bread and fresh tomatoes ($45); Oysters with Ponzu sauce and salmon roe ($4 each) and Salmorejo ($15). Example salads include Fennel Carpaccio with burrata, Kalamata and dried tomatoes ($18) and Californian Burrata with cherry tomatoes, basil and Balsamic vinegar ($16). Options from the Raw Bar include White fish Tiradito with avocado, Chilean green onion, salmon roe and Togarashi ($18); Beef Carpaccio, Foie and truffle ($27) and Cod salad with tamatoe, Kalamata, onion and fresh oregano ($26).

Pasta entrées include Veal stuffed Paccheri, Porto and parmesan ($34) and Spaghetti Putanesca ($23). Fresh fish entrées include Black cod with potato and vanilla coulis, savoy cabbage and chickpeas ($38); Red snapper with vegetables, Peruvian causa and orange roasted chicken glacé ($34) and Sashimi tuna with Pak Choi and “migas” ($27). Meat dishes include a 42oz Josper Rib eye ($88); Josper Spring chicken with “Escalivada” ($28); Josper Pork ribs with fingerling potatoes, garlic and shallots ($32); Josper Lamb shoulder with potato parmentier ($48) and Chicken terrine with foie and slow roasted chicken reduction ($28). Delightful desserts include Passion fruit, coco and mint slush ($12); Disaronno soaked Almond sponge cake, chocolate cream and vanilla ice cream ($14) and the restaurant’s own “KLIMA Pie” ($14).

Select meats on the menu at KLIMA Restaurant and Bar are cooked to perfection in the Josper Oven – a unique charcoal filled oven from Spain that is especially created to grill meats evenly and with a perfect tenderness, resulting in a taste similar to that of an outdoor barbeque. The Josper Oven at KLIMA is only one of two currently being used in South Florida.

“Soft Woods” is the theme of the interior design for KLIMA Restaurant and Bar with inspirations coming from Brazil, Sweden and Spain. Thin slates of beige wood that has been dried and aged for 6-months are packed across the ceiling of the restaurant’s front section, giving an impressive initial focal point when entering the property. A comfortable lounge area, situated upon entering the restaurant, features relaxing chairs and built-in sofas adjacent to wooden and rustic cast-iron candle-lit coffee tables that creates an inviting space for happy hour cocktails or after-dinner drinks. Modern-day artwork selected and imported by both founders are placed throughout the property, accentuated by a suspended centerpiece that faces the street, positioned in the window of the restaurant. Imaginatively sculpted by carved metal letters to resemble the silhouette of a human-like figure, the art piece entitled “Tel Aviv Man XVI” by the famous sculptor Jaume Plensa from Barcelona, is a curious addition to the restaurant’s décor. In addition to the restaurant’s main menu offered for indoor or outdoor patio dining, KLIMA’s sleek bar area offers patrons a tailored menu of small plates designed for sharing and to accompany the extensive list of wines, beers and cocktails.

The varnished floor of the restaurant’s main dining area is a natural oak throughout, while dining tables are combined with a “Caoba” tropical red wood. A select number of larger dining tables are of a premium quality black or brown tinted marble, also imported from Barcelona. Separating the bar area from the main dining room is an alluring stretch of intimate tables designed for two, with comfortable couch seating set against a tall wooden bookshelf containing the restaurant’s own collection of ornaments, models and sexually provocative books. Colorful rugs are strategically placed to compliment the wooden finishes, giving the restaurant a cozy and homely vibe. As one passes through towards the main dining area, a subtle image of ocean waves can be seen on the wall opposite the bookshelves, among which surfers are featured within the entire length of the 14-foot photograph. Around the corner, on the far wall of the spacious dining area, hangs a large horizontal mirror behind a series of elaborately designed hanging black spot lamps that also forms an artistic centerpiece unto itself.

The outdoor sub-tropical pérgola (veranda) includes marble dining tables and cane ceiling sections, some of which are transparent to allow views of the star-lit sky. Trailing foliage, potted plants and outdoor greenery climb the iron metal framework towards the indoor dining room, creating a harmonious contrast between the two areas. Lighting fixtures with hanging lampshades shaped into beehive-like wooden spheres and cylinders create an outdoor glow above colorful rugs. Heavy floor-to-ceiling sliding glass doors gives diners the option for complete outdoor privacy from neighboring guests or an unobstructed view of the action inside the restaurant.

The newly appointed Executive Chef, David “Rusti” Rustarazo, originates from Spain and brings a highly seasoned expertise in Western Mediterranean and Catalan cuisine to the table. Through his long working relationship with Rustarazo and KLIMA Miami co-founders, Pablo Fernández-Valdés and Yago Giner in Barcelona, Spain’s reputable culinary authority, Albert Ventura, is the gastronomic advisor for KLIMA Miami. He will be in residence at Amanoi for two periods over the summer season, and will be offering sessions which work on releasing muscle cramps and negative patterns in the body and mind using a number of different healing methods. By placing equal emphasis on curing psychological, emotional and physical ailments, he will help individuals build a more empowered and refreshed outlook on life. Through this, the sessions will also give guests a sense of lightness and rejuvenation.

Amanoi will also host leading specialists in the fields of raw food (Dean Gleeson) and movement (Andrew Cox) during the month of June. Throughout June, Dean, an award-winning raw food chef, will run group and individual culinary lessons and will create raw food and juices. From 18 until 28 June, Stephen Kirwin, a neuro muscular specialist, will be in residence and available to release deeply held patterns of muscular tension that can result in pain and injury, and Andrew Cox will provide individuals with challenging and fun movement and fitness sessions.

Each Spa Journey begins with the traditional practice of Misogi - a water-based foot bath using seasonal Kampo herbs with mineral sea salt.

Spring is the season of renewal and in Japan this is symbolised by the blooming of Magnolia and the revered Cherry Blossom. As the flowers bloom, so do humans in their body and spirit. As such, spring is the traditional season for practicing Misogi to reflect this commitment to renewal and purification. This journey provides the awareness and sense of appreciation for the beauty of awakening the system within. Seasonal herbs used in this treatment include Japanese Mountain Nioikobushi (magnolia), Green tea and Sakura (cherry blossom). For the Spring Journey, the Misogi incorporates Nioikobushi which has an uplifting and awakening effect. This is followed by a body scrub containing Japanese clay, rice oil, and green tea. The treatment is rounded off with a body massage using Nioikobushi essential oil and rice oil with a reviving massage technique.

Cameron Walker is a gifted Holistic specialist from Australia with over 15 years of experience in Craniosacral Therapy, yoga, breath work and deep tissue massage. He will be in residence at Amanoi for two periods over the summer season, and will be offering sessions which work on releasing muscle cramps and negative patterns in the body and mind using a number of different healing methods. By placing equal emphasis on curing psychological, emotional and physical ailments, he will help individuals build a more empowered and refreshed outlook on life. Through this, the sessions will also give guests a sense of lightness and rejuvenation.

Amanoi will also host leading specialists in the fields of raw food (Dean Gleeson) and movement (Andrew Cox) during the month of June. Throughout June, Dean, an award-winning raw food chef, will run group and individual culinary lessons and will create raw food and juices. From 18 until 28 June, Stephen Kirwin, a neuro muscular specialist, will be in residence and available to release deeply held patterns of muscular tension that can result in pain and injury, and Andrew Cox will provide individuals with challenging and fun movement and fitness sessions.

In Sanskrit, shanti means ‘peace’: peace of body and mind; peace in the entirety of one’s being. Amanbagh itself is a peaceful oasis which evokes the palatial elegance of the Mughal era. The three-night ‘Shanti’ retreat allows one to discover the serenity of the resort and includes daily yoga, sunrise walks and an excursion to Bhangarh or a Champi Indian head massage.
